Katie Fulp’s Yummy Chili Recipe!

Check out Katie Fulp’s recipe for some delicious, healthy chili … perfect for these beautiful Fall Days! Eat outside to get some extra vitamin d, too!

Chili:unnamed

1 each poblano and red onion
1 lb locally raised lean ground beef
2 cans diced tomatoes
1 can tomato juice
2 cans black beans
2 cans red beans
1 pkg Williams Original Chili Seasoning
dash of cinnamon (or more if you’d like)
salt and pepper to taste

Directions:
In a large stock pot:
1. chop and sautee poblano and onion, remove and set aside
2. brown hamburger meat and add chili seasoning, and other seasonings
3. combine rest of the ingredients, including onion and poblano (can drain and rinse beans if you prefer – I don’t)
4. put on for a slow simmer. When you can’t take the delicious smell any longer, serve it up! (30-45 mins)

Hardy Salad: red cabbage, carrots, grape tomatoes, cucumbers. Balsamic vinegar for dressing.

Crackers – Pepper jack Nut Thins are great with this (and gluten free)
